Creamy Lemon Mini Gnocchi with Peas
Ingredients:
2 Tbsp olive oil
16 oz mini Gnocchi
*you can absolutely use regular sized gnocchi too but my girls love the mini version!
1 cup frozen peas
1/2 cup onion, finely minced
4 cloves garlic, minced
1/2 cup heavy cream
Zest + Juice of 1 lemon
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1/2 cup Parmesan cheese
Directions:
Heat a pot of water.
*Go ahead and start heating it up now so it will be at a boil and ready for the gnocchi.
Heat olive oil over medium heat in a large skillet.
Add the onion and cook for 3-5 minutes.
Add the garlic and cook for 1 more minute.
Pour in the cream, frozen peas, 1/2 tsp of salt and 1/4 tsp pepper.
Once the water is boiling, cook the gnocchi for 2 minutes. Drain, retaining a little bit of the gnocchi water.
Add the gnocchi and a splash of the water to the pan along. Mix well to combine.
Add the zest and juice of 1 lemon.
Stir in the Parmesan cheese.
