What’s On The Menu:
Sunday - One Pot Creamy Tuscan Chicken + Rice
*This dish packs so much flavor!! The sauce is one of those I want to drink up with a spoon. Best part is that it makes the amazing left overs. See tomorrow for how I repurposed.
Monday - Kale + Cheese Tortellini with Left over Tuscan Chicken
*I used the left over sauce and chicken from dinner last night to mix in with cooked tortellini. THIS is my favorite tortellini. I chopped up the left over chicken and poured the sauce into the cooked tortellini with a little bit of butter and the other half bag of baby spinach. Everyone loved it and it was a quick, easy and cheap way to stretch left overs a second night.
Tuesday - Creamy Lemon Gnocchi with Peas
*This is a great quick and easy last minute meal, ready in under 20 minutes. Cooks in one pot with minimal prep and my kids will eat it. Checks all the boxes for a Tuesday.
Wednesday - Fridge Clean Out + Left Overs
Thursday - The Easiest Baked Chicken + Baked Potatoes & Broccoli
*I shared this super quick and easy baked chicken recipe last week. It’s perfect when you reallllllly do not want to cook dinner (but still have to feed yourself and your family).
Friday - Family Date Night
*99.9% of the time this is at our favorite local Mexican restaurant.



Other Notes:
I shared the perfect creamy mushroom sauce this weekend. I serve it over steak or chicken for an elevated date night at home. It quickly cooks while the steak is on the grill.
Fresh Harvest continues to be our best decision of 2025. It’s the only way I am getting in enough veggies these days.
